Meatballs:
1 cup fine, dry breadcrumbs
1 cup milk
2 large eggs
1 cup grated Parmesan cheese
½ cup finely chopped fresh parsley
4 teaspoons kosher salt
Freshly ground black pepper
1kg ground beef
1 cup finely chopped onion
2 cloves garlic, minced
Mushroom Gravy:
1 tbsp olive oil
6 tbsp unsalted butter, divided
2 cloves garlic, finely minced
400g sliced mushrooms
½ tsp salt
¼ tsp black pepper
4 tbsp plain flour
2 cups beef stock
Meatballs:
Prepare Breadcrumbs – In a small bowl, mix the breadcrumbs and milk. Set aside to absorb.
Mix Wet Ingredients – In a large bowl, whisk the eggs. Add Parmesan, parsley, salt, and a generous amount of black pepper. Mix well.
Combine with Beef – Add the ground beef and mix thoroughly using your hands.
Incorporate Onion & Garlic – Add the finely chopped onion, minced garlic, and soaked breadcrumbs. Gently mix everything together. Avoid overworking the meat.
Shape Meatballs – Form the mixture into meatballs (about 2 tbsp each) and place them on a lined baking tray.
Bake – Preheat the oven to 200°C. Roast the meatballs for 25-30 minutes, or until browned and cooked through (internal temperature of 74°C/165°F).
Mushroom Gravy:
Cook Mushrooms – Heat olive oil and 3 tbsp butter in a large skillet over medium-high heat. Add all the mushrooms, salt, and pepper. Cook for about 5-6 minutes, stirring occasionally, until golden. Add minced garlic and cook for another minute. Remove mushrooms from the skillet and set aside.
Make the Gravy – In the same skillet, melt the remaining 3 tbsp butter over medium heat. Add the flour and stir constantly for 1½ minutes to cook out the raw taste.
Add Stock – Gradually pour in the beef stock while stirring to prevent lumps. If lumps form, whisk vigorously to dissolve them.
Thicken – Cook for 3-4 minutes, stirring frequently, until the gravy thickens to a thin-syrup consistency.
Combine & Finish – Stir the cooked mushrooms back into the gravy. Cook for another minute, then taste and adjust salt as needed.
Serving Suggestion: Pour the mushroom gravy over the meatballs and serve with mashed potatoes, pasta, or rice. Enjoy!
